It’s so simple and easy it doesn’t really need a recipe at all. You just steam some basmati rice and while that is steaming sauté veggies and chorizo sausage in a pan, add a splash of wine and the steamed rice and season with fresh herbs and black pepper (you may not need salt as the chorizo is very salty but do check!)

We used up leftover veggies from the fridge – courgette, asparagus, tomatoes and peppers – you can use anything though, just throw it in with the chorizo over a decent heat.
