Recipe Notes | Mince Pie Croissants Published: 24-12-2017 For our last day at work we made these mince pie croissants to use up some leftover mincemeat. Full disclosure … we didn’t make the croissants from scratch (although this recipe by Paul Hollywood isn’t impossible and apparently is amazing) – we bought these ones from Waitrose. We got the idea for the mince pie croissants from a client who said he’d tried and loved a cross between a mince pie and a croissant at a bakery in the City…To make these the way we did is super simple – all you need to is mincemeat, eggwash, flaked almonds and icing sugar. We sliced the croissants and put 3 teaspoons of mincemeat inside. Brush with egg and sprinkle over the flaked almonds. Place in a fan oven pre-heated to around 180C and leave to bake for 8 minutes. Once removed from the oven, dust with icing sugar. For an extra dose of decadence, spoon in a dollop of whipped cream or ice-cream.Season’s greetings from us all at HM!
