Easy Squidgy Chocolate Pudding Published: 30-10-2022 Possibly the easiest and most delicious pudding to make at short notice and with simple ingredients!INGREDIENTS375g fresh medjool dates, stones removed and chopped 100g butter, at room temperature 125g brown sugar 2 eggs 150g self raising flour, sifted 250ml boiling water 2 tbsp cocoa powder, sifted 1 tsp bicarbonate of soda Ice cream or cream to serveMETHOD1. Preheat the oven to 160°C fan / 180°C static.2. In a large bowl add the dates, boiling water and bicarbonate of soda in a bowl and set aside for 5 minutes. Once the dates have softened up, add this mixture along with the butter and sugar into a food processor and process until combined well.3. Next add the eggs, flour and cocoa and process again until well combined.4. Lastly, divide the mixture between 6 x 10cm Staub minis, place on a large baking tray and cook for 25–30 minutes or until cooked when tested with a skewer. Alternatively, use a Staub 24cm cocotte or similar size dish and make one big one.
