Baked Apples With Berry and Marzipan Crumble Published: 27-10-2024 Taking baked apple dessert to a whole new level, this recipe is super easy and the perfect way to end a cool, crisp autumn day. The subtle crunch of the pink lady works in harmony with the sweet marzipan and sour tang of the berries – all topped off with a dollop of velvety smooth ice cream.Ingredients (Serves 6)6 pink lady apples 60g porridge oats (gluten free oats will work just as well) 60g marzipan chopped into small pieces 60g frozen berries 1 1/2 tsp cinnamon 2 tbsp butter Ice cream to serveMethodPre heat the oven to 190°c. Cut the tops off the apples, then using a sharp spoon, scoop out and discard the cores. Take care not to pierce the skin if you can. You’ll want roughly a 1cm border of apple to create a sturdy shell. Add the frozen berries, oats, marzipan and cinnamon to a bowl and mix well. Stir in the melted butter and pile the mixture into the apple shells. If you have refrained from eating the tops of the apples, feel free to chop these up and add to the mixture. Place the apples on a sheet of baking paper and place them in the oven on a tray before cooking for 20-25 minutes, or until tender and golden. If there’s spare mixture, spoon into a ramekin and bake on the same tray as the apples, you can spoon more on top when you serve with ice cream or fresh cream and extra berries.
