Grilled Peach and Burrata salad with Basil and Mint Vinaigrette

This salad is summer in a bowl; sweet, smoky peaches paired with creamy burrata, peppery rocket and zingy vinaigrette is a match made in heaven that kept us going back for more. Enjoy this salad as a light lunch or enjoy as a side as part of a barbecue.

Serves four for lunch or two for dinner.

Ingredients

  • 4 large peaches
  • 1 pack of cherry tomatoes (roughly 200g)
  • 2 Balls of Burrata
  • Mixed rocket and watercress salad

Basil and Mint Vinaigrette

  • 10g basil (or a handful if you don’t have scales to hand)
  • 10g mint (of a handful if you don’t have scales to hand)
  • Juice and zest of 1 lemon
  • 6 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 tbsp honey

Method

  1. In a small mixing bowl combine all the dressing ingredients and whisk together until combined and set aside.
  2. Slice the peaches and grill for 2-3 minutes each side or until grill marks appear.
  3. Assemble the salad by laying greens onto the base of your chosen dish and arrange the peaches, chopped tomatoes and tear pieces of burrata as you see fit. Drizzle half the vinaigrette on the salad and serve the other half in a small dish.
  4. Enjoy with fresh slices of bread and a glass of something fizzy – happy summer vibes!
